30% of the grapes is fermented through a carbonic maceration giving intense fruity aromas. The rest is vinified to a traditional process of pump overs and delestages. During the vinification the objective is to extract softly the typicity and richness of this terroir preserving a good freshness. After the traditional ferments, a maceration of the cap is released and controlled during around 15 days in order to acquire more richness and structure giving priority to silky tannins
The viticulture started in this area during the middle age, under the influence of the monks of the abbeys from this region.
Components of the soil: clay and sand. Under ground: schist, granite and volcanic rock. An oceanic moderate climate characterizes the region (mild temperatures and rainy episode of low intensity). Gobelet and trellis systems are both used in the area. The wines of this are reflect the wonderful landscape and terroir: powerful, complexe, elegant, harmonious, with relief and full of character.
