Pale straw yellow colour. Fruity nose due to the varietal blend and the short bottle ageing. Harmonious on the palate with apple and hints of toast. Very well balanced, good freshness and pleasant acidity level.

We plan the ideal moment for harvesting each grape variety. After destemming and pressing the grapes we obtain the must. We add yeast and the must ferments at 15°-17°C. Once fermentation is complete, blending takes place and the resulting wine is bottled with the licor de tiraje mixture of sugar and yeast. The bottles are transferred to underground cellars where second fermentation occurs, followed by a period of ageing. The wine spends a minimum of 9 months in cellar before release.
In 1551, Jaume Codorníu began making still wines in Penedès, Spain. In 1872, having studied the ‘champenoise method’ of sparkling wine production in Northern France, Josep Raventós, a descendant of Codorníu, applied the technique to the traditional Penedès grape varieties of Macabeo, Parellada & Xarel.Lo and created the first bottle of Cava. Today Codorníu is an award-winning winery with the best selling Cava brand in the UK and back home in Spain.
